Those kinds of hotels command big bucks. Many of them are celebrity haunts, but unless you're into that kind of stuff, you can definitely spend much less, particularly if you're willing to stay at lesser known boutique hotels.
In Nice, you can get a deluxe room with terrace overlooking the Mediterranean at the La P rouse. That's complete with a pool surrounded by lemon trees, reviews new world renaissance hotel kowloon hong kong a large rooftop terrace with a great view, and very nice staff.

You could visit Cannes on your way to the Antibes area easily, or backtrack there on a daytrip. Heck with the rail transport in the Riviera, you could go clubbing in Cannes and come back to your nice area without worrying about your blood alcohol level.

St. Tropez would absolutely fit the bill. But do go out to the beach clubs - nice beach, lovely spot for lunch, and great people (and yacht!) watching.

We took Le Petit Train from Antibes to Juan-Les-Pins and from our quick walk around I really think we would have preferred that to Antibes. Again, we were in an apartment so I can't recommend a specific hotel, but if you do look into the area, consider Juan-Les-Pins over Antibes.

But I also haven't spent a ton of time in the area - just 2 separate day trips a few years apart, so I'm no expert. I feel the same way about Nice. The thing I learned is no matter what you do, you will love it. How many times do people come back from a trip and say it was horrible and they hated it? I'm sure it happens, but I do think it's extremely rare. Enjoy!
If you decide to stay in Nice, you could also look at Le Palais de la Mediterranee, a completely renovated art deco hotel directly across the street from the sea. It's got ocean front rooms ( some are not large, but you could upgrade with that budget, I think), a spa, small pool, casino, good food, and is within easy walking distance of Old Nice. Plus the hotel has its own private beach club.
In Santa Margerita Ligure, check out Hotel Grand Miramare, a very old-fashioned hotel with opulent rooms and grounds. Again, it's across the street from its own private ( small) beach, and an easy walk into town.

As for your hotel budget - if you want a sea-view suite at the most exclusive hotel in town - no that budget won;t cover it. But you can get very nice lodgings in centrally located elegant hotels for that. You will just have to decide how much of a splurge you want to make.
